About Us

Vero Quest is made up of three dynamic speakers: Kate Hoffmann, AP; Vickie Shannon, LMHC, CAP; and Beth Walsh Eriksen, Publisher and Author. Each of these women shares from the heart to help you achieve soundness in body, mind and spirit.

Kate Hoffmann, AP

Kate1 Kate Hoffmann, AP was born and raised in Germany. In 1991, her journey into holistic medicine started while working as a manager for Motorola (ISG). Her high-stress career path and poor lifestyle choices caused an acute pancreatitis. The MDs wanted to perform exploratory surgery because they were not quite sure what to do. Kate declined. She found an acupuncturist/naturopath and a Reiki Master instead.

Soon after, Kate attended a Level One Reiki class. She was put on a very restricted diet, took nutraceuticals, got regular color puncture treatments (a form of acupuncture without needles, which she now uses in her practice, too!). She treated herself extensively with Reiki. After 10 weeks she was completely healed, which is very uncommon for such severe pancreatitis.

This started her on a search and thirst for knowledge that brought her all the way here to Vero Beach, FL. Kate achieved the Level of  Reiki Master in 1994 and is currently a Nationally Board Certified Acupuncture Physician. With incredible knowledge about nutrition and meditation, she received her Bachelor's Degree in Health Science and a Masters Degree in Oriental Medicine from the ATOM, Atlantic Institute of Oriental Medicine in Fort Lauderdale, Florida. She is a board member of the Florida State Oriental Medical Association (FSOMA).

Kate has been practicing Reiki (Energy Healing) for 19 years, and apprenticed for a year with a Reiki Master in Germany.  She has been teaching Reiki since 1994. Currently she is working as an Acupuncturist and Wellness Consultant for Absolute Complementary Medicine  in Vero Beach, FL, where she is available for your health care needs.

Kate has a passion for sharing her experiences and knowledge with others, and is grateful to her employer, Absolute Complementary Medicine, for letting her be a part of Vero Quest. She finds teaching with the other Vero Quest presenters fulfills her personal Quest.

Vickie Shannon, LMHC, CAP

Education
Born and raised in New York, Vickie received her Bachelor of Science in Education Degree from the State University of New York Collage at Cortland in 1985, where she majored in Health Education.  She moved to Florida in 1985, and received her Master of Education Degree in Mental Health Counseling from Florida Atlantic University in 2001.  She has been a Licensed Mental Health Counselor in the State of Florida since 2004.

 

Vickie has been a State of Florida Certified Addictions Professional since 1999.  She is also recognized as an Internationally Certified Alcohol and Drug Counselor by the International Certification & Reciprocity Consortium (ICRC) since 1999.

 

Experience
Vickie has an extensive history working as a counselor in both the public and private sectors, within a variety of treatment modalities.  She has worked as a counselor in detox, residential, day treatment, and outpatient facilities.  She has also worked as a counselor in jails, psychiatric hospitals, and community-based mental health facilities.  Aside from her role as a counselor, Vickie has also served in a leadership role in many facilities, in such capacities as Clinical Director and Chief Operating Officer.  She has also been an Adjunct Instructor at Indian River Community College.  Vickie’s passion is in teaching.  She is known for her ability to capture attention through a blend of information and humor that fosters and encourages personal accountability and responsibility for change.  At the same time, she communicates a sincere compassion for those undergoing the rewarding process of personal transformation.

 

Beth Walsh Eriksen, Publisher and Author
Presents on SPIRIT
Beth Walsh Eriksen is the Publisher of the Florida Family News, a regional publication dedicated to helping families attain success. Beth is a freelance writer with numerous articles published in magazines throughout the United States and Canada, as well as six finished books that await publication such as Box of Feelings, Life is a Limbo Contest, and her favorite, the Spiritual Heat Journal. 

Beth enjoys a love affair with her Creator  crediting a compelling spiritual experience at age 20 with personal transformation. This event made her hungry for Truth, and she has been pursuing strong spirit life ever since. Gifted with communicative skills, Beth has been blessed to facilitate intensive six-month study groups that encourage personal transformation for twenty years running. 


Beth Walsh Eriksen makes her home on the Treasure Coast of Florida with two teenagers, Emily and Luke, a 14-year-old border collie, Risa, and a striped, gray cat named Ralph. Her personal mission statement reads: “I have been called to help my brother find his authentic self and his God, and I best accomplish this end by sharing my pursuit of the same.”
